Cookie Dough
Ripe bananas and almond flour, vegan egg, and almond butter are the base ingredients of this dough. Therefore it should be thick enough, to hold its shape. We do not add any extra liquid. Because of its thickness and stickiness to be able to bake the cookies you just need to scoop it with a teaspoon and place it onto a baking tray, no shaping anything with your hands- which really saves time!
Vegan “Egg”
The best option for the egg replacement in this recipe is psyllium husk powder mixed with water in a 1:3 ratio. This mixture creates a jelly that is perfect for the dough to hold its shape and bind everything together.
3 easy steps
First, if you are using raw almonds – blend them into flour in your powerful blender or a food processor;
Second, combine ripe bananas, almond flour, almond butter, psyllium, and a tiny bit of baking powder into a sticky dough;
Finally, use a teaspoon to place equal amounts of the dough in a shape of a cookie on the tray and bake for 12-15 minutes.
